Recipe of the Week: Artichoke, Goat Cheese, and Chicken Pizza

I had originally planned on making this pizza (labelled "healthy" by our friends at epicurious.com...not sure if they are being totally truthful, as there is lots of cheese involved) on Friday night, but it got bumped to Saturday afternoon. No biggie. That was the night the toilet gurgled to within an inch of its life, so I'm glad I didn't have to worry about burning pizzas at the same time.

This recipe was pretty good, though not AMAZING. I looooove goat cheese with all of my heart, but mixing it with the ricotta tamed down the flavor a little too much. Don't get me wrong--the pizza was yummy--but I feel like it can be better. Someday maybe I'll figure out how.

Ingredients:
Olive or vegetable oil cooking spray
2 boneless, skinless chicken breasts (4 ounces each), thinly sliced
1/4 teaspoon dried oregano
4 ounces goat cheese
1/2 cup skim ricotta
1 whole-wheat pizza crust (12 inches)
1 cup rinsed and drained canned artichoke hearts, halved
2 large plum tomatoes, diced
2 tablespoons grated Parmesan
1 tablespoon fresh oregano

Instructions:
Set oven to broil. Lightly coat a large broiler pan with cooking spray. Sprinkle chicken with dried oregano; season with salt and pepper; place chicken in pan. Broil 2 minutes per side. Remove pan from oven; set oven to 450°F. Mix goat cheese and ricotta in a bowl; spread evenly over pizza crust, leaving a 1-inch border. Top with chicken, artichokes, and tomatoes; sprinkle with Parmesan. Bake until Parmesan turns golden, about 8 minutes. Sprinkle with fresh oregano and serve.

My Own Improvements:
-I took the suggestions of others and added a large clove of garlic (chopped) to the cheese mixture. I love garlic. Keeps away the vampires, you know.
-I added some slices of green pepper to the toppings, because green peppers make everything better. I debated adding some onion too, but then reconsidered since I had no idea if onion + goat cheese = good or horribly, horribly narsty.
-Did not buy fresh oregano. If a had an herb garden, I would have definitely added some to the 'za, but spending $3.00 on a huge packet of herbs from the grocery store that are going to die in two days and go to waste just doesn't fly with me. So I sprinkled more dried oregano on top of everything.
-I think you could use only one chicken breast. I was born without the magic ability to look at a slab of chicken and immediately determine its weight in ounces, but there was not enough space on that pizza for all of the veggies AND the chicken.

i made an awesome pizza that was very similar once and i believe the recipe was from a weight watchers cookbook. it was seriously the best pizza ever. i'll have to dig it out for you and give it to you, you know, IN 2 DAYS.
